Nutritional immunology analyzes the critical relationship between what we eat and the immune system, and some nutrients and eating patterns can affect the capacity of the immune system to have optimal resistance levels. Vitamins A, C, D, and E as well as the minerals zinc, selenium, and iron significantly protect against infections along with dietary fiber and pre/probiotics to regulate gut microbiota and immune homeostasis. Undernutrition and overnutrition are both detrimental to immunity, hence the need for individualized nutrition strategies as part of disease prevention and recovery. In this session, we will review the immunonutrition science, nutritional strategies, and their application for various infections, autoimmune diseases, and chronic diseases.
